Cara's Healthtastic Pesto
Sauce:Steam one head of Broccoli and one head of Calliflower
Add salt, pepper, red pepper flakes to taste
Blend in blender or cuisinart with fresh basil and fresh garlic until smooth
Pasta:
Bring water to boil in large pot. Add salt and green tea bags (for antioxidants). Take the tea bags out before adding pasta. Cook whole wheat pasta.
*I usually cook some chicken or scallops with the sauce and pour it over the pasta. This is a great dish for people who don't usually like veggies.
Trainer Jess's Lemon Chicken Stir-Fry
½ c water
¼ c lemon juice
1 T cornstarch
2 T. applejuice (or) sherry
1 tsp chilli powder (or) sauce
1 chicken boulion cube
1 lb. chicken breasts (skinned-sliced thin)
Veggies (carrots-cabbage-peppers-hot peppers-broccolli-snap peas-etc.)
1 clove garlic
2 T. splenda
- Heat wok till hot; cook chicken and garlic until no longer pink; remove from pan.
- Add in veggies, maybe spraying the wok with Pam again, and cook until crisp.
- Add chicken back into wok; add sauce and splenda; mixing thoroughly; cook until thickened. This shouldn’t take long if your wok is hot enough.
- Set aside for a few minutes and serve.
This is a nice easy to make dish, I fix all the time. It’s really fast if you use chicken tenders and fresh veggies. I add a lot of onions to my dishes, so try sauté them with the chicken first.
Pulled-Pork Fajittas
1/3c cider vinegar
2 T. splenda
2 T. Worchester sauce
½ tsp salt (I like to use garlic salt)
1-2 T.
¼ tsp cayenne pepper
2 lbs pork
Cilantro (chopped)
Tomatoes (diced)
Red onion (diced)
Whole-wheat tortillas
1. Mix vinegar, splenda, worchester sauce, salt, tobasco in a bowl and pour into slow cooker; add in pork and veggies; and set slow cooker up to cook all day on low.
2. Drain your slow cooker, saving most of the veggies to use in your fajitas.
3. Take the pork and it should pull apart in a shallow baking pan easily with a fork. Add back the veggies you save from the sauce.
4. Add pork to the tortillas, which are best served if you grill them lightly with some Pam on a skillet; cook them gently so they don’t charcoal.
5. Wrap them up and eat away.
Cindy’s Turkey Vegetable Soup
3/4 Head of red cabbage~ chopped
1 Red onion chopped
2C chopped carrot
3C Broccoli florets
2 medium size sweet potatoes~ diced
3C chopped celery
1Pkg. Ground Turkey breast ~ browned and seasoned
1Tabelspoon brown sugar splenda
3 dashes of Worcestershire sauce
1/2C
3 cans 98%fat free low sodium chicken broth
1/4C fresh parsley
1 can chopped stewed tomatoes
1 tsp salt
Fresh ground pepper to taste.
Put all Ingredients in a crock pot/ slow cooker and cook 5-6 hours on low.
This is great with a little brown rice if you need the extra carbs.
